Coriander rice is also prepared with ground coriander leaves along with the onions and masalas. But this is the way mom used to make with finely chopped coriander leaves. The aroma of fresh leaves makes the rice so flavourful.
Ingredients:
Cooked rice ..... 2 cups
Coriander leaves .. 1 cup or more ( finely chopped )
Onions ........... 1 small (chopped finely)
Green chillies .. 1-2
Ginger .......... 1 tbsp (grated)
Garlic paste ... 1 tsp
Cumin powder .. 1/2 tsp
Coriander powder .. 1/2 tsp
Turmeric powder .. 1/4 tsp
Salt
Oil
Tempering:
Mustard seeds .... 1 tsp
Cumin seeds ....... 1 tsp
Asafoetida ........... a pinch
Dry red chillies .... 1
Curry leaves ........ 1 sprig
Urad dal .............. 1 tsp
Peanuts .............. handful
Method:
1. Cook the rice adding a little salt. Drain and set aside. (You can use the left-over rice too)
2. In a pan heat a little oil and add the tempering ingredients.
3. When they crackle, add the onion, ginger, garlic and green chillies. Saute for a minute.
4. Now add the coriander leaves and the spice powders.
5. Tip in the rice and stir well to blend with the masalas.
Serve hot.
